Darroll’s journey began in the early 1960s, starting from the ground up as a wash-up boy. Over the decades, he mastered every facet of the trade—qualifying as a shop butcher, slaughterman, and smallgoods maker. His career took him across Australia’s eastern seaboard before he and Tricia established their own successful butcher shop on the Gold Coast in 1992.

There, they became known for their innovation, pioneering value-added products and providing custom catering for major organizations, clubs, and private events.
