Directions: Beef (80-85CL) 16.6Kg, Meal 1Kg, Iced Water 2.4Kg, (Red wine may be used at 0.7 Kg Wine and 1.7Kg iced water. Total 20Kg. Mince meat to required texture. Mix meal & water together to form a slurry. Mix meat and slurry together. Mince again.
