Directions: Meat & Fat 23.4Kg, Premix 1Kg, Claret/Red Wine 0.6Kg, Denkurit 0.045Kg (45g), Starter Culture as required, Total 25.045Kg. Mince meat to required texture. Mix premix, wine and Denkurit together to form a slurry. Mix meat and slurry together. Mince until required consistency is achieved.
